Wine

See Saw Wines

Orange, Australia

Gamay

Harvested from Balmoral vineyard (900m elevation) on 6th April. Following a cold soak (whether we liked it or not, it was chilly by April in Orange!), we fermented in open top vessels. Hand plunged once per day; the electric colour developed beautifully. No new oak was used to capture the vibrancy of noveau Gamay. Lightly filtered and bottled in October 2022.

The Gewürztraminer was hand-picked on the 6th of March. Placed into slotted half tone bins and taken directly to the winery these whole bunches were then moved into open fermenters.
