For both the regular and the barrel aged pumpkin porter, we add spices that are normally found in pumpkin flavored things (allspice, close, cinnamon, nutmeg, ginger, vanilla etc) on the hot side of the brew process, much like we’d add hops in the process of brewing an IPA. It’s a lot like making hot tea where the spices are able to get the best flavor and extraction when hot. Then, the spiced wort is sent to the fermenter where we add pumpkin puree that we source from Stahlbush Farms in Corvalis, OR. As the beer ferments, it interacts with the pumpkin. If you’ve ever had pumpkin by itself, without anything else, it’s pretty earthy and lacks flavor. The pumpkin adds a fuller mouthfeel to the beer, but our pumpkin porters are generally lighter bodied than a stout and tend to be on the lighter side of dark color – more like a really dark brown. The color comes from the malt bill, which uses some darker malts like Maris Otter, Crystal, Munich and Chocolate malts.

The first pumpkin beer we brewed was actually a collaboration with DC Brau from, you guessed it, Washington, D.C. It was called “Fermentation without Representation.” Our current recipe has changed a bit along the way and is now a bit darker than the original recipe.

The Barrel Aged Imperial Pumpkin Porter is always finished in some type of barrel. Most often whiskey barrels. This year we actually finished some of the beer in sherry wine barrels!

Imperial Pumpkin Porter

The essence of the fall! This beer explodes with aromas of sweet spices giving way to chocolate and roasted malt. Flavors are reminiscent of fresh-cut pumpkin and chocolate and complimented by hints of clove, fresh Madagascar vanilla beans, nutmeg and allspice.

ABV: 7-8%
